Pork neck katzu, pickled skin, chipotle mayo & orange ponzu
PROCEDURE
on a pan put big spoon of clarified butter and slowly splash the katzu with a spoon until it golden brown evenly and after put in oven 160 for 5 mins aprox
it has to be cooked slowly and crispy
meanwhile at the pass section prepare pickled pork skin salad by mixing: pickled pork skin, cabbage, sczechuan oil, black& white sesame seeds, lime juice, salt and pepper (on the plate garnish with few chives)
on a hot plate prepare rice, pickled pork skin salad and cutted katzu without ends
sided with 2 dipping sauces (chipotle mayo & ponzu)
