PROCEDURE

(burn the sake to eliminate the alcool)

Add all the ingredients except the bonito flakes and the orange.

Put it on fire till reach 90 degrees.

Let it cool down,add Katsobushi and the orange sliced in 4.

Leave it over night in the fridge and drain it the next day.


INGREDIENTS

  • 2 tbs of sake

  • 2 tbs rice brown vinegar

  • 2 tbs tamari

  • 220 ml soy sauce

  • 80 ml mirin

  • 250 ml lemon Juice

  • 80 ml orange juice

  • 4 pcs kombu

  • 20 g katsobushi

  • 1 whole orange
