Chili ginger grilled chicken & calamari cakes fried rice

PROCEDURE

Place the marinated chicken breast on the grill.

Fry 4 pcs of calamari cakes,once ready make 2 skewers (metal one)

Chop finely some garlic, ginger and lemongrass in same amount.Very important that the flavor has to be balanced.

Season well the wok and put a table spoon of the mixed mince with 4 lime leaves and a bit short green chili(keep in mind that the chili has to be 10% of the mince),coriander stems.

Add the rice,toss and stir everything very well.

Add scallion,the eggs,fish sauce and squeeze some lime just at the end before serving.

In the square dish place the fried rice and the chicken leg ontop. Garnish with the skewer sauce (room temperature), pickled ginger,fried shallots,scallions.

Put 2 prawn crackers.

  • Chicken leg(marinated 24h with cumin,coriander seeds powder,salt,pepper,paprika,garlic powder and for other 24 hours with oyster sauce and chinese wine).

  • 4 cubes of calamari cakes
