PROCEDURE

Blend all the ingredients half way through (need to leave some pieces of squids in the mix).

Grab a gastro (the rectangulare metal one) and cover the bottom with a layer of plastic foil.

Place the mixture and flat it down gently with the spatula.

Wrap everything very tight with plastic foil and steam it for 1h at 100 degrees.

  • 1 egg white

  • 10 g shallots

  • 10g garlic

  • dill

  • pepper

  • fish sauce
