Softshell crab slider with wasabi mayo

PROCEDURE

Place the 2 buns in the steamer

Coat the soft shell crabs with corn starch (CLEAN & SIFTED) making sure it is nicely open (SPECIALLY THE HEAD)

Fry the crab for 3 minutes

Immediately season with salt and lemon

Serve it with mayo and spring onion

Make always sure the bread is warm and clean

  • 2 half Softshell crabs

  • 2 Bao buns

  •  20 g Wasabi mayo

  •  8g Spring onion short

  •  Lemon juice

  •  Salt pinch
