raw dry aged beef almond chili bits and salted orange

PROCEDURE

flat down the slices as in the picture and one by one starting from the salt add all the ingredients carefully making sure that all the slices have everything on.

Served with roti bread(1).


INGREDIENTS

  • 100g of meat sliced 2 mm

  • 1tbs chimichurri

  • 1tbs chili bits

  • 1tbs oil from chili bits(szechuan oil)

  • 1tbs caramelized almond

  • 1/2 tsp chili ring

  • 1tsp salted orange(1x slice)

  • 1pinch of smoked maldon(first ingredient to put)

  • 1good pinch of fried shallots

  • fresh orange zeste

  • served with roti
