pork and clams dumplings

PROCEDURE

Marinate the clams with sichuan oil

Fill up the yellow won ton with a tbs of pork mince and 6 clams,close it just with water and corn starch corner to corner.

Very important to don’t leave air inside,press them well around the filling.

Boil for 4 minutes,season it with sichuan oil and plate it in the rectangular plate.

Garnish with black vinegar dressing,white sesame(black),

  • Won ton pastry(yellow for soup)

  • Pork mince(20 per cent fat)

  • Clams

  • Spring onion

  • Orange zeste

  • lemon zeste

  • Black vinegar dressing

  • Almond chilli sauce

  • Pickled ginger
