PROCEDURE

Blend the meat in the robot mix in 3 or 4 times.Add every time a cup of corn starch and water and half cup of oil.

Season the meat with salt and pepper

Pass at the vitamix the garlic and the ginger together with the rest of the ingredients.

Add everything with the meat and mix it for 10 minutes with hands(gloves on).

  • 4kg pork mince dumplings(plus 20 per cent fat)

  • Corn starch and water

  • Normal oil

  • 150ml sesame oil

  • 150ml sweet soy

  • 200ml oyster sauce

  • 70ml chinese wine

  • 600g ginger

  • 100g garlic

  • 3tbs salt

  • 3tbs white pepper
