Preparation of the teas

WU LIANG SHAN MAO JIAN (green tea, fruity)

3 grams of tea, infusion for 3 min. 80 degrees hot water

PU-ERH BEENG CHA ( puerh, earthy)

4 grams of tea. Wash the leaves for a min with a hot water, then discard the water.

90 degrees hot water, infusion for 3 min

EARL GREY (black tea, floral and citrusy)

3 grams. Infusion for 3 min. 100 degrees water.

PROCEDURE

Put boiling water in a big teapot and a tea cup. Discard the water (you do this to warm them up). Put new boiling water in a teapot.

In a glass brewing teapot add the tea leaves.

At the table pour hot water from the teapot into a small one with leaves. Turn the sand timer and tell to the customer in how many minutes they can pour water BACK into the big teapot after the tea is done brewing.
