PROCEDURE

Cut the potatoes in wadges;

Boil them in salty water till they are soft(approx 20 min);

Shock it in the chill blaster,they need to be frozen;

Poach the potatoes in the oil till they beacam firm;

Put them again in the shocker and freeze them.

During the service take them straight from the freezer and fry till they get crispy and golden.

Season with biang biang and salt straight away out of the fryer.
