Handpulled Biang Biang prawns noodles mint and orange

INGREDIENTS
180g noodles
80gr chopped shrimp
6-7 pieces green beans
2pcs garlic chopped finely
salt
Pinch curcuma
Pinch paprika
Pinch white pepper
6 cubes butter
Mint 50%
Coriander 25%
Perilla 25%(all chopped chiffonade)
Tsp of preserved orange finely chopped
lemon zest
Orange zest
Pickled chilli

PROCEDURE
Chop the prawns and season in a pan with salt pepper, curcuma and paprika
roast them in butter with the garlic chopped and green beans.
Add a bit of stock or water so the sauce emulsified
in a bowl mix sechuan oil, coriander oil, black vinegar sauce.
add the noodles, prawns Ragu, herbs, zest and preserved orange
In order to create an emulsion mix it properly
plate and garnish with scallion, pickled chilli, yellow panko and prawn crackers
