JUNGLE CURRY PASTE

INGREDIENTS:

  • 2kg shallots

  • 0.5kg garlic

  • 0.6kg lemongrass

  • 800gr deseed long green chili

  • 400gr ginger

  • 200gr coriander stalks

  • 30gr lime leaves

  • 100gr galangal

  • 30gr shrimp paste

    DIRECTIONS:

  • Blend all ingredients together

  • Add small green chili if the long one isnt spicy enough

  • Roast the paste and balance with fish sauce, palm sugar.
