miso cured duck ham

PROCEDURE

In a bowl season the miso and spread it all over around the duck breast.

Place it in a rack for five days,leave it to dry under the ventilation.

  • 5/6 duck breast

  • 500g white miso

  • 100ml sichuan oil

  • Salt

  • White pepper

  • Black pepper

  • Korean chilli flakes

  • Cumin

  • Koriandr seeds powder

  • Smoked paprika

  • Garlic powder
