PROCEDURE
Blitz all ingredients together.
Cook paste in coconut fat or peanut oil.
After 10mins add fish sauce.
After 30 mins add palm sugar.
After 45mins add more fish sauce.

600gr red onion/shallots
25 cloves garlic
8 pcs galangal
20 pcs lemongrass
12 pcs coriander roots
100gr peanut
10 tbsp coriander seeds
50gr cumin powder
4 pcs cinamon sticks
2 tsp green cardamon powder
8pcs of mace
1/3 of 4 large nutmeg
