Ingredience :

15 kg trout fillets

2.5 kg salt

2.5 kg sugar

Zest of 2 orange, 4 lemon, 4 lime

2 shot of vodka

1/2 glass water

Procedure :

Mix all of the ingredience and cure the trout 2h.

Wash it well and dry it up.
