manchurian sauce

PROCEDURE

Cut all the vegetables in brunoise.

Heat some oil in a pot and add the ginger and garlic,saute for 1 minute.Add spring onion bell pepper and cook for 1 or 2 minutes at high fire.

Lower the heat and add the soy,hot sauce and ketchup.

Add the cornstarch mix,the veg stock,vinegar,salt,pepper and sugar.

The result is a slightly sour,spicy and sweet.

Cook on medium heat until the sauce thickens(don’t thicken too much as it thickens more after cooking and when cold).

INGREDIENTS

  • 10g Garlic

  • 5g Ginger

  • 30g Spring onion

  • 45g Bell pepper

  • 45g Shallots

  • 2tbs Soy sauce

  • 4tbs Hot sauce

  • 2tbs Ketchup

  • 2tbs Vinegar

  • 60g of water combined with 6 g cornstarch

  • 240ml Vegeterian stock

  • 1tbs Of sugar

  • Salt and pepper
