Lamb ragú

Ingredience:

10kg lamb meat

100g salt

100g sugar

10g black pepper

2kg red onions

1kg carrots

200g celery

2kg pelati

25g cumin

25g paprika

200ml white wine

2l stock

Process:

  • Marinate over night meat with salt, sugar & pepper

  • Roast the meat, diced onion, carrots & celery

  • Deglaze with wine

  • Add stock & pelati

  • Cook for at least 1 hour but not boil it

  • Season with paprika & cumin
