Watermelon Sorbet & Mascarpone Whipped Cream

Refreshing and without cream suitable for vegans

Mascarpone cream 

500g mascarpone

300g cream

45g powdered sugar


Combine everything in a mixer and whip until stiff peaks


Watermelon sorbet

600g water

350g watermelon

250g sugar

2g salt

50g lemon or lime juice

3 - 4 lime leaves

120 ml white wine 

Coriander leaves (roughly chopped) 


Make an infused syrup with sugar, water and lime leaves. Simmer for 15 to 20 min

Blitz watermelon & combine  mixture with sugar syrup 

Add wine and lime/lemon juice

Balance with more lime/lemon  juice & wine if necessary 

Put in the ice cream machine and near the end add coriander leaves


Serving

Two balls of sorbet, a generous amount of cream on top, garnish with coriander leaves
