SHRIMP CRACKERS
100g shrimp paste
1,6kg tapioca pearls
Cook tapioca until translucent (around 15min). Rinse under cold water.
Combine the shrimp paste with a bit of water so it is liquid
Combine this paste with the rest of the tapioca. Let marinate for around 20 min
Spread out evenly and thinly on foil / silk pad and dry until top is dry to the touch (this takes about 2 h)
After the top is dry you need to flip it on a metal rack without foil and continue drying until crisp (another 4 to 6h)
