CORIANEDER CRACKERS

Suitable for GF people

Do not mind the color this is a sample picture

230g coriander

1,5kg tapioca pearls

1 tbsp salt

1 tbsp white pepper

1 tbsp ginger powder

1tbsp garlic powder

Cook tapioca until translucent (around 15min). Rinse under cold water.

Start by blanching coriander and cooling it in ice water so it keeps a bright colour. Strain well.

Combine the coriander with 100g of tapioca and blitz with hand mixer until smooth paste

Combine this paste with the rest of the tapioca

Add the seasoning (salt, pepper, ginger & garlic powder) and mix well

Spread out evenly and thinly on foil / silk pad and dry until top is dry to the touch (this takes about 2 h)

After the top is dry you need to flip it on a metal rack without foil and continue drying until crisp (another 4 to 6h)
