ZABAIONE ICE CREAM

1l milk

1l cream

Combine and heat up

150g sugar

500ml yolk

5g base 

Combine until fluffy 

350ml Marsala wine

50ml rum

Add 150ml of Marsala wine to the milk/cream mix. 

Bring to a bare simmer

Slowly pour in the milk/cream into the egg yolk/sugar

Add remaining marsala wine

put mixture on stove and cook until it reaches 70°C

Chill down completely

Place in ice cream machine for cca 20 min
