CHAI ICE CREAM

1l milk

1l cream 

Bring to a simmer 


First add

25 g black tea

30g ginger


Then (Toasted)

5g cardamom

9x cloves

8x juniper

2x anis

3x cinnamon

1 tbsp black pepper

½ tsp white pepper 

Small chilly

Simmer for 10 min


Combine in mixer

300 g sugar

250g yolk

5g base


Combine the milk and yolk mixture slowly. Put back on the fire until it reached 66°C

Let cool down with spices. Strain and add in an ice cream machine.
