Chilli Jam
Ingredience :
15 kg red onions
5kg garlic
1,6kg red chillies
2kg sugar
500g fish sauce
15g salt
300g tamarin water
Process:
roast the onions in the oven (until golden 180 degrees)
deep fried the garlic until gold
roast the chillies in oven, deseed then and soak in water over night (10 mins 180 degrees, mix every 2 minits)
Blend everything and cook on slow fire adding the seasoning
