Almonds, dairy
Almond ice cream
Ingredients:
1lt milk
1lt heavy cream
2 cinnamon sticks
1/2 vanilla pod
Heat up, just below boiling point
300g sugar
250g egg yolks
5gr neutro base
Mix in mixer until, doubled in volume and fluffy
Slowly combine warm milk/cream mixture with egg yolk mix. Bring back on the fire, constantly scrape the bottom and cook until you reach 66 degrees.
Remove from fire and add:
50 ml Amaretto
100g condensed milk
Let it cool down completely, strain and put in ice cream machine for cca 30 min. After 20 min check consistency and add 150g of roasted almonds
